Hi, has anyone done this the other way and fitted a street twin seat to a Bonneville t120?

I have. My 2016 street twin seat will fit my 2018 T120 with no modifications. It does snap in place a little tightly and can take a little jiggling to get it loose once the seat key is turned but no problems. As expected the standover height is reduced a bit compared to the stock T120 seat. The look is a bit ‘off’. Just doesn’t look quite right, but the comfort is very good. The street twin seat provides a wider platform, but doesn’t have the front to rear position flexibility that the T120 seat affords. I’m fortunate in that my butt likes both the T120 seat and the street twin seat, and I regularly do 6+hour rides. If looks aren’t a big concern and you can stand a little bit lower standover height, a street twin seat on your T120 just might be the ticket.
