Once you put on a conversion kit, you can use any bar you want. I'm currently running M-bars but have tried superbike bars and straight drag bars too. If you want wider bars, no problem (but the cables only stretch so far -- so replacement would be the next thing if you go too wide). Good luck.
The original owner of my Thruxton converted her to M bars. They’re 33” wide, and required changing both the clutch cable, and front brake line (luckily he gave me the stock ones so I can go back) so if you’re going to go this wide (or wider) I’m going to assume you’ll need to plan on changing the cable and brake line as well.
