Just rode my bike to work today ( was awesome) and found that my oil looks like green chocolate milk. Yummy. I'm sure it's either a head gasket or oil cooler failure. Question is, which is more likely? Bike has 27k plus miles. Been running fine till this. Never overheated. Easy ways to test for either? Could I pull the oil cooler and test with air and a Guage? Thoughts.....

It's entirely more likely that Your oil cooler is bad. However, your water pump has two seals on it. One for oil, one for coolant. Pull your water pump out and check the seals. It can cause this same symptom even without over heating. Ask me how I know =D
