I am changing my air filter setup and I am considering just running the vent to exit out the rear of the rear fender. Would there be any issues with this?

Just make sure the oil drips do not get on your tyre. Note also thatthe air whistles up [astthe fender and will tend to draw the oil mist towards it.
In the old days often the oil pipe would be positioned above the gearbox sprocket in order to oil the chain. This is normally fine provided you do not have an exceptionally 'wet/oily' motor. Use some kind of metal pipe for this, to bend into place. Fix it well to make sure it cant fall onto the sprocket.

well, as far as i know the '78 and prior vented , as you say, over the back mudguard(fender) so don't see why not. there weren't too many engine mods made at this time eh?

My '76 vents at the rear edge of the rear fender and it is original. It never goes to the airbox.
I don't think any oil ever comes out as there is no oil residue back there.
