The riding position on a Daytona 600/650 is a lot like the riding position on a TT600 or S4. That is to say that the bars are fairly high and the riding position is fairly roomy. The pegs feel a little lower on the Daytonas, so that is an advantage if you are very tall. I think the seat is actually a bit higher. KeithU, who posts here off and on, rides a TT600 on Iron Butt type rallies, and he has to be at least 6'-4. If you don't plan on 1000 mile days on a regular basis, then it should fit fine.
The Daytona 675 is a different animal altogether. The riding position is roomier than you would expect, but it sure isn't a touring bike. If you don't mind riding in a nearly full race crouch all the time, it is fine, but if you have back, neck, or shoulder problems, it might be a bit much.
