Feels like the bike is bogging down in 2nd gear and on. Too much air or gas or too little air or gas.

I am running Norton pipes. I know I will not get a perfect smooth ride with those but that is all I have right now until I find others.

No idea what needle I have but the clip is in the middle position.

Suggestions how how to smooth out the ride?

If you have the air enricher (choke) slides in the carbs, you need to make sure you are operating them correctly.

If you PULL the lever, it RAISES the slides, meaning that is how you turn the choke OFF.

If you RELEASE the lever, it LOWERS the slides, meaning that is how you turn the choke ON.

If you are trying to ride with the choke ON, slides LOWERED, lever RELEASED, it will bog out.

I am not using the choke slides. I do not have them installed.

After a ride, pull the plugs. They are your best diagnostic tool for jetting, that and the way it runs. If the plugs are clean, try moving the needle up a notch....move the clip down to move the needle up.
It may be that the mufflers are just too restricitive. Are they exceedingly quiet?

No they are not quiet. Very close to stock bonne pipes in sound
