Being baptised by a t120

hello all,
let me start by saying that I've always been a Harley guy, but now making my transition over to Triumph. Im in the begining stages of my first build and trying to gather as much info as i possibly can. the finished bike will be a rigid frame hydraulic forked T120 driven bike. so, im beinging with the heart...the engine and trans..... I've begun my search on glorious Ebay for a set of cases, transmission plate, gears, forks, etc. and begun to search for a head as well. so, now i have questions for you guys already! lol!
1.) for my engine cases, as far as the T120 goes, are they all the same, or did they change them during the years at some point? i ask so that i know what year cases to buy, to make it easier to buy all the goodies that bolt to the cases.
2.) should i go single or dual carb set up? i know the tr6 head conversion seems to be popular.
