I prefer doing one side at a time, easier to hear the changes in tune and much much easier to set a 1500rpm fast idle on each cylinder - before trimming back to 800-1000rpm as the final step.
I'm not convinced that the chap in that clip has achieved the best tune for his bike tbh.
