I'd say your set up is as close to spot-on as you'll get.
The adding of the shim has more effect overall than changing the main, as this only effects the top end.
I have an A/F gauge fitted and I'm running more or less the same kit as you.
I think 112 's will run you slightly lean at higher throttle positions.
