And the answer, for those of you who care, was a #48 slow fuel jet, courtesy of my local HD dealer Rocky's.
This reduces the slow jet by the ratio of the radii of the two jets. The #48 has 76% of the area of the #55 (a 100 jet has a diameter of 1 mm I'm told). Now, when the fuel screws are turned all the way in, the engine rpm starts to drop (but does not shut down). The sweet spot seems to be about 2 to 2.25 turns out.
Must say I like the remote fuel adjusters. A lot nicer than burned fingers.
