The brake-pedal on my Bonnie got some scratches from a little mishap earlier this Summer. I assume that it would be possible to sand it to good condition again, but don't know what grade sandpaper I should use. The assumption is that it would be best to use atleast two, maybe three different grades (one to get the scratches out, and one or two to get the stock finish back.
Can anybody tell me what would be two or three good grades to use, please?
Also, would this apply to all aluminum parts on the bike?

600, 800, and 1000 for a final. Make certain to keep the part wet.

Depending on how scratched it is, you may be best off starting with a file, then I would do wet or dry 220, 400, 600, 800, and then buff with a dremel and some metal polish. That's how I did it and it looks lovely.

Aluminum is a wonderful metal to work with, hook in to it, don't be shy, it is very forgiving.
Worry about getting all the marks out first concentrating on getting the 'grain' ar scratches all going in one direction and then work your way through the wet and dry as described.
If you want to shortcut the process -
If you have a dremel you are laughing if not go to a hardware store and pick up a sanding flap wheel for your drill.
Or if you have a buffing wheel for your grinder you can generally remove any scratches in alloys just with the wheel and a bit of cutting compound

I do have a Dremel. Would the sanding band 432 be way too coarse for first-round?
