As per the title, th ewife is a bit short on the legs and has been eyeing up my Legend! So which one do you guys think would be best for her?
T100
Bonneville
or even a Legend.

The T-100 and Bonneville are the same (in terms of seat hight). How about an America or Speedmaster?

America or Speedmaster too short in the legs, she sat on both and cannot change gear or brake!

As pabone stated above, seat height is the same on the Bonneville regardless of whether it's a T100 or a standard model. The seat height listed for those models is 775mm.

Per past and present Triumph specs listed on Hermys website, I find listed a seat height of 720mm for an America and Speedmaster; a seat height of 725mm for a 2000 Legend and Adventurer; and a seat height of 675mm for a 1999 Legend and Adventurer.

Looks like a 1999 model Legend or Adventurer might be your best bet for the little lady. I don't know if or when those models were ever sold in the UK, but here's a link to the specs I pulled from... Hermys.com

Or get Speedmaster/america-lenght rear shocks, and drop the forks to match.

BellaCorse also offers Hagon shocks that are -30, so you could drop the bike about an inch with shocks and pusing the fortubes up the trees.

You can drop the Bonnie by lowering front forks, shorter shocks and a corbin seat, they just need inseam measurment . Lowered my seat hight by just the seat, and now my feet are flat on ground :-D :???:
