I saw a post some months back where one of the forum members shaved down his stock saddle. Well, I thought I'd give it a try, and it turned out fairly decent. I really didn't take a whole lot off (fearing I'd muff it up and have to buy an aftermarket saddle), but It did lower it slightly. I used an electric knife for carving turkeys and such! Then I smoothed it out with a pice of rough scotch brite. You gotta be careful though or it will take chunks out with the scotch brite! Then just a matter of stapling the cover back on. :-D
