What is the biggest tyre size that can be fitted onto the stock rim of the back wheel? A mate of mine managed to squeeze a huge tyre on the back of her kawasaki 440 ltd!

I have a 160/60 on mine. It fits, no rubbing, but I have 3/4" chicken strips on each side. I plan on upgrading rims soon to some 4.5" wide that the tire will fit better on.
