Does the Air Injection Removal have any performance benifits or is it simply to keep the exahust temp down and prevent the blueing of the headers? Just something was wondering.

Keeps the exhaust temps down so you don't burn holes in piston tops. This was an issue with the earliest of the imported machines from Triumph, and has been noted by several magazines with test bikes.

It was put there to conform to EPA regs and similar regs in other countries. It creats a lean condition inthe cylinder, and eats pistons if not removed. This is also the cause of the popping on decel (lean condition).
