I've done a few searches, but nothing solid came up.

Looking for jeting FAQ, mainly for:

Thruxton
Bonneville
T100

with:
Basic (free) airbox mods, high flow mufflers
Aribox removal, high flow mufflers

Numbers to change on:
Main, pilot, needle, fuel mix

I would assume that the baseline would be close for anything sea level to a 1000 feet.

Depending on how free flow your cans are I would start with:
42 pilot
150 main
No shim on the needle

Then head to the dyno and get a good a/f ratio reading at 1/4. 1/2, 3/4, and full throttle. Make some witness marks on your throttle in 1/4 turn increments to verify the run and note each a/f reading at each mark. The carbs work on throttle position, not rpms. I hope this helps.
