Guess we're not the first brit bike riders to have kinks in our pipes. Some of the early seventies Nortons sported New Bonnie-esqe silencers.

Not that it matters a lot, but I don't think those mufflers are original style. I think all of the early 70's Nortons had reverse-cone silencers. By the mid-70's the reverse-cone got modified a little, but I don't think that's what's on this bike-I don't think that the seat is original style either.
I see lots of bikes listed on e-bay with the term 'original' used inappropriately.
The bike still looks good, though.

Why the dissatisfaction with the kink? Is it a cosmetic or functional thing, or just not of the classic style? The woe of the kink has been mentioned many times.

It is an original Norton style of exhaust used on the 750 'Interstate' Commando. It is swept at that angle to allow for fitting of panniers, the Roadsters had the upswept 'peashooter' exhausts (wonderful things they are...). I'm not sure if the type of exhaust system fitted to the pictured bike was ever (originally) used on the 850s as they changed the silencers to the 'bean can' type soon after the 850 was introduced. Nice looking bike, but the tank transfers need putting on in the right place. And the seat has been modified, could be uncomfortable, the cushioning was thin enough as it was.

I actually don't mind the kink. I've said it before. I think it frames the guts of the bike quite nicely. I just thought it was cool to come across another bike with the same look.

There is something to be said for the curved, kinkless, sweeping pipes of the old bonnies though. Older riders I come across are quick to point out the kinks in mine. They tend to find the muted exhaust note appauling too. I'm fixing both with a set of tt pipes.
