The rear sprocket is definitely NOT made from white metal. Mine is steel (Thruxton) and I have no reason to suspect any of the others would be any different.
As to the irregular wear; at 2500 miles you shouldn't be seeing any wear (assuming you keep your chain suitably lubed, and don't make a habit of riding through piles of carburundum dust). I have 6,000 miles hard riding with no visible wear and no need for adjustment yet.
