I would guess that the light works off of a level sensor, and a bike is seldom level in normal use. As others have said, accelerating, braking and leaning will all have an effect on the fuel level.
I do find that cruising along a relatively straight road at a constant speed, the light will come on sooner and stay on sooner than if I am hooning around town.
ps I am seeing the light first come on at about 110, and then it's intermittent up until about 125 when it comes on solid.
