I do a lot of touring and have found that if traffic isn't too hairy, tucking under my tall OEM screen and resting against a tank bag full of underwear, socks and t-shirts can be a very comfortable and stable way to ride

If not riding 2-up, using the rear pegs from time to time helps keep the knees from aching. If traffic is light enough to do so.

I'm 6'5" with a vented Clearview XL, Corbin seat and Genmar riser. Vast improvement over stock set up. During the summer, however, a sport screen may be an option to benefit from the cooling wind blast.

Up to about 180 km/h the 12" sportsscreen from clearview works ok, there is wind, but no buffeting. Above 190 km/h the bike starts to create a slight wobble feeling, it stops when you tuck yourself around the tank, the wind is gone,but the wobbly feeling reappers around 210 km/h. This was with fully loaded bike, one up, with both sidebags loaded, a big topbox and tankbag.
And no, in norway we dont ride in these speeds unless you want your licence to disappear in a flash.
