My 2001 900 trophy doesn't seem to throttle down as quickly as it should. She winds down slowly as opposed to dropping of. Is this normal?

Mine did the same thing until I turned the idle down just a bit. Hasn't done it since.

Since we're sorta on the topic, what does everyone run their idle at? Mine is set around 1300.

Any lower and it bogs a little after sitting at a stop light.

My '95 Trophy stated doing the same thing...high, sticking idle.
Then the cable broke...ah ha...there's the problem!
But also check for cracked intake boots and loose clamps.

I probably didn't describe the problem correctly. Her idle is fine and the throttle mechanism performs smoothly. I can hear the carbs actually close, yet the engine rpm's wind down rather than drop off. My America throttles down instantly, the Trophy takes about 3 sec.

What happens when you let go of the throttle and let it snap shut? Does it affect return to idle? If it does, you might try pulling the tank and make sure the return springs on the shafts aren't fouled with dirt and road grime.
If they are, clean them with a good flushing of WD-40 (Stay away from solvent sprays as they can cause carb shaft o-rings to swell) and blow dry with compressed air, then spray a good silicone lubricant on the springs and shafts.

I had the same problem. Cleaned the carb return springs etc and the engine reacts instantly now.

My 1996/1997 Trophy does 1000 RPM when idle.

It could be a lean condition caused by dirt in a jet or, as Bigern suggested, a vacuum leak. Have you adjusted the fuel screws to 3 turns out? Your idle speed seems a little high which might be necessary to counter the actual problem. BTW, my Sprint 900 is happy with an idle speed of 900-1,000 rpm.
