I just purchased and received norman hyde silencers, I'm understanding that I need to rejet. Does anyone know which mains and pilots I should start out with. I will also be pulling out the restrictor in the airbox.

Nice one. You can get away without rejetting but it is better if you do go u a couple of sizes.
What you do really need is a hex screw set for the carbies.
I would suggest 125 to 130 mains.
I would also suggest throwing the airbox to the sh!thouse and NARKing it.
Have fun,
Darcy

M-Biker,
I have an '03 with the 790 motor. With free-flowing BC Teardrop mufflers, airbox divider in place, NH Bellmouth, and a Unifilter I use Thruxton needles (no shims), 42 pilots, and 128 mains. The idle mixture screws are about 3 turns out. It runs just a bit rich, but very strong with little or no pipe blueing.
