As you've said, wheelies probably aren't an issue when land speed racing a motorcycle. The gearing is probably higher and the point isn't to beat a 1/4 mile time but to go a long distance, which allows for better control of the power down low to stay away from spinning the wheel. Although I'm not a land speed racer, I used to go to El Mirage dried lake in So. Calif. and watch my father tune some of his racecars. I know that a longer wheelbase makes for a more "stabilized" ride, especially on a motorcycle and at speeds above 100 mph. The salt isn't like taking a 160 mph cruise down the paved highway, but is a handful when racing, so any advantage of stability gives time slip and safety rewards.
