My brother just put in red backlights on his gauges on his Thruxton and it looks super slick! Does anyone know if you can do this change on the 04 Daytona as well?

Yes, you can do it. You have to take apart your clocks and put in red LEDs in place of the original lights, but it can be done. I haven't done it myself, so I can't say how to do it, but I have seen the results with blue and green LEDs. Red would be no different.
