Wait time for service is going to vary by dealership. Sometimes this variation can be pretty wide, and that's true of any make. Some shops can get you in right away, others can't.
With Triumph,
most* service parts are are readily available from the distributor. Again, though, there will be variations in how willing the dealer is to place an order. Some wait weeks until they have a large order...and some of those, in turn, blame Triumph for the delay, when in fact they're just trying to minimize shipping costs for themselves.
"Most" being readily available still isn't the same as "all," though. Once in a while, when a part isn't in stock in the US, there can be a wait. In this regard, I find Triumph's response to be better than Ducati or Aprilia, and at least as good as BMW and KTM.
What I generally tell people is, if you (1) use your one and only bike (2) for daily transportation, and (3) don't have a dealer within a reasonable distance, look at the Big Four instead. If you have a little flexibility in the number of bikes and/or how you use it/them, then it boils down to the particular dealer and your personal priorities and patience.
The Triumph Models & Dealers forum would be a better place to ask about dealers in your own particular locale, as you will reach more members to draw upon for advice of that kind.
