I understand your point. In my case, if I've done my route planning the way I really want, for much of the time there will be no traffic, no services of any type and maybe no cell phone coverage. Been on some paved roads where there aren't even fence posts or side gravel roads for miles.
That being said, I know I always bring too much stuff, and I don't usually need any of it. But, for those times I do, it sure beats being stuck in the middle of no-where, hoping someone comes along.

Flat repair kit, wallet with ID, Cash, and Cards, and phone. Anything more than a flat tire and my day's over with. I'm calling the truck to come pick it up.

I compromise and carry a bathroom sink. It can't handle the same dish load a kitchen sink can, but you can do them a few at a time and it saves loads of space and weight.
