I was wondering what the original poster had before this bike. Coming from a more pedestrian bike and having just got a 2008 Speedy, I think I may have some slight insight.
I have noticed this as well, but it seems that it is just that the bike is so responsive. You having had a cruiser before there are many differences than you may just have to get used to.
1 - Lightweight rotating mass. Less inertia changes speed quicker. Sportier bikes have light weight pistons, rods, crank and flywheel compared to a cruiser. So that little twist on the throttle that made the cruiser slowly lumber forward will make a sportier bike jerk. You may have to do what I did and adjust your throttle inputs to be smaller and smoother.
2 - Possible switch to fuel injection from carbs. Sometimes that can make for snappier throttle.
That is my personal experience. Hope it is just an adjustment needed in the nut on the seat, and not something amiss.
