I have my first trackday on Speedy next weekend and have to drain the coolant and replace it with either water or water wetter. Which is better? And also, how do I do it? I assume it is easy.

Water Wetter is an additive, not a stand alone product. They have a nice video showing what it actually does to the water - it helps, but I don't know if I'd waste money on putting it in the rad and then draining it out when I get home.

Check and see if the track allows Engine Ice. That is what I run in my bike - it accomplishes the same thing as Water Wetter does, but its a pre-mix, and also gives -20F protection, something Water + Water Wetter isn't going to do.

Some tracks have rules for water only (that way there is no mess on the track if you crash). Others have rules for non-toxic coolant - which Engine Ice and Water Wetter would fall into.

As far as draining, I just disconnected the lowest hose, and the radiator cap, drained, filled with distilled water, ran it a bit, and repeated that procedure twice. I wanted to make sure I got all of the coolant out before I filled with Engine Ice. You can't mix Ethelyene Glycol and Proplyene Glycol together.

I took my draining a step further (cuz I'm anal) and use compressed air and a homemade seal from the top of a milk jug to blow all of the remaining water out of the engine block. Don't forget your overflow box either - it has Ethelyene Glycol in it as well, and that needs to be removed (excellent job for the compressed air).
