Ok, here's the thing, I have a Veypor and it says I'm getting 44 miles per gallon. I drove 152 miles and put in 3.485 gallons to top her off.

3.485/152 = 43.6mpg - so the Veypor is correct.

So why does the light come on at 160 miles with roughly 2 gallons left or 86 miles to go?

How many miles have you gone on one tank?

Triumph has a tendency to have the fuel light come on too early. Which is ok on the 2005 or newer models because of the smaller fuel tank. And smaller reserve. I usually try not to go more than 20 miles when the little light comes on. 140-150mpg on a tank on the S3 is ok, the seat is so hard it is time for a BUTT break.

BTW yesterday I average 37 MPG.
