The octane rating depends on compression, the higher the octane the more compression it can take.
If you put 89 in a vehicle the requires 93 it will pre-ignite because it cannot handle the compression.

in other words the... TOR's and new map will not change the compression your safe with 89 or higher.

....now if you get pinging or knocking in the top end, thats pre-ignition - up your octane.

I've been running hi-octane in mine w/ the TOR pipe and map and still get annoying backfires on decel, hoping that I won't foul the plugs...

Should I switch to mid grade octane?

Hairball is correct. Octane has nothing to do with anything but pinging (pinking) due to high compression and/or poor combustion chamber design. Neither of which does the S3 suffer from. Unlike some V-twins I could mention.

Nobody needs to be running anything more than 89 in their S3 and and change up or down will have no effect on "popping" or backfiring on deceleration.

My 05 S3 runs just dandy on 87 octane, with no pinging or any other problems. Just don't buy cheap fuel (cough cough ARCO cough cough)

Are you using the aftermarket fuel map? If so, the only thing that will clean that backfiring up is a Tuneboy or PCIII. I have some backfiring on my aftermarket can, but it only really happens if I accelerate hard and then close the throttle abruptly above 6500 RPMs.

I've got the matching Triumph off-road map for my TOR high mount CF pipe. The dealer horsed around with the air/fuel mix to cure the off-idle stumble coming out of the gate and it's running good. I get the backfire when I roll off the throttle coming down a freeway off ramp or coming to a stop light from around 5-6K.

I always run the highest octane I can find, 93 would be bare minimum on my bike.

And much higher racing fuel at track days.

I started with 89 octane when I picked the bike up, but a few tanks later decided to run 87 to see what happens. It's been running great on 87 ever since, with no pinging or knocking at all.

Nice to save some $$ too...

i always put 93 in mine(cam2 if i'm feeling generous) i guess mainly because it only cost $10 to fill up the tank and i've always had cars that needed it. does the s3 lose any power putting lower octane in it? i know that on some of my previous cars they would run fine off a lower octane because the cpu would change the timing but would lose a wee bit of power in the process. i'm pretty much completely ignorant on the subject regarding triples though.
