Need some help!

Hi, just got an old beat up '65 T100ss. Looking to make a bobber out of it. It's been in a yard for at least 15 years and needs lots of work. Pretty much just a frame and motor(matching numbers). Engine is intact and seems to be all original thats why I thought it would be a decent project. I've rebuilt a couple of dirt bike years ago, but never such a extensive project like this. Just was wondering if I can get some direction as far where to start? I am a CNC machinist and thought if anybody local to me wants some custom made parts we can barter for some assistance in my project. I'm in North Jersey. Here are some pictures of this debacle.

Shoot, if that was mine, I would have duct-taped a lawn mower gas tank to it and had it up and down the street by now. Nice to find matching number bikes that have all the core bits still there.

I would have loved to have it down the block, but the motor is frozen. Hope it just a top end problem. I see you have a restoration shop. What would a total rebuild of the engine cost, just a ballpark figure. I am not sure if I have the chops to do it on my own yet.
