Don't know what you have tried but the safety switches need to be worked around. The side stand switch, clutch lever switch, nuetral switch and kill switch are wired to the ECU. If these switches have been dealt with, the bike should start and run. A shop manual shows wiring diagrams from which you can devise work arounds.
A chopper with a Triple and fuel injection is unique. It would be a shame to convert it to carbs IMHO. Hope you post photos when you're done. Good luck.
