Why is the "drain the oil while it is hot" always reccommended?

Seems to me that if you shut down the motor while it is hot, and then come back the next day and drain the oil, don't you get it all? Maybe a bit more is going to cling to the sides of a cold sump?

Is the difference really worth dealing with a hot plug, filter and risk of splashing hot oil on yourself?

The idea is that small particles of metal, etc. are in suspension for a short time and will come out with the oil, rather than settling down into various crevices in the crankcase. :-D

Plus when the oil is warm or hot it tends to be thinner so more oil is removed and it takes less time.

TCB is right...when you drain your oil after running the motor at operating tempeture, all the junk such as metal particles, soot, carbon and and any gas dilusion all gets blended together with the hot oil which helps get all the byproduct junk out of you engine. Besides, nothing is better for your complextion than a good ol'e splashing of used motor oil on your mug! :-D
