Wrong Jets in a 790cc symptoms?

Hi all
Wrong Jets in a 790cc symptoms?
I have had to replace the pipes on my 2003 790cc t100 with road legal ones (it came with loud pipes)
I understand from the dealer that the carburetor was fitted with lager jets to accommodate the loud pipes.
The bike still runs fine but with top speed of 95mph????
Is this due to the jets? and does anyone know what symptoms I will be experiencing with these incorrect jets installed?.
Finlay (sorry as it's my 1st Triumph) how far should I be able to ride on a full tank before the reserve tank has to be turned on?

Other Motorcycle: Honda chop
Free-er pipes might mean larger main jets - affecting say 3/4 throttle to WOT (wide open). So back to normal pipes, it'd then run a bit richer at the top end.
Also there may be mods to other parts of the carb, needle etc. Probably best posted in the section for these bikes, someone might know the stock sizes and settings.
