The middle carb has a T fitting on each side. One leg of each T connects to the next carb, and the other leg of each T is connected to an open hose. What is the function of the junction?? :???:

Those are the carb vent hoses.

If this were a California bike, would these hoses be connected to the charcoal cannisters? And is it possible to get contamination throug these?

Yes. I found a silverfish in one of mine once!

You can't cap them off either, or fuel will run out of your carbs and into the engine... You can put a small filter on them , however...

Yes, according to the trusty Haynes manual, you are correct.
I quote, " A solenoid operated valve in the float chamber vent pipes allows air to flow into the float chamber whilst the engine is running......when the engine is stopped the solenoid closes the vent to the air and any fuel vapour then passes down the vent pipe to the canister."

Further downstream the canister is in the system.
