When I go into 'full lock' on the bars my carburetors start to 'starve' . I don't believe that my handlebars are stock (buckhorn style), which may explain my carburetor action.
The question is, can I safely replace my OEM cable with a longer one and cure that problem? Do I have compatibility issues ?

What bike do you have? You have a number of options, Tbird cable is longer than a TBS, Adventurer (should be) longer than a Tbird.

If I remember correctly the Adventurer, Legend and Thunderbird throttle cables are all the same part no. Don't know about the TBS though.
It may just be a case of re running the cable from the carbs to the throttle body.
I switched my Adventurer from buckhorn (which were standard on pre 99 models I think) bars to lower bars and just re routed them to take up the slack
