As drummerboy suggests a blocked tipover valve or kinked tank breather hose can cause these symptoms: when it happens loosen or flip open the gas cap. If it makes a whoosh sound and/or the bike will start right up then it's the breather / valve. If you have to wait for the bike to cool then it's most likely the ignition pickup (see below)...
Stalling and stumbling on a Carb triumph is often caused by:

The tip over valve is horizontal or the pipe is kinked, it must be vertical- see the shop scrapbook phot album
The poppet valve in the gas cap must be free to open and close, check valve in the middle of the gas cap will open and close properly (poke it with a small stick or similar) if it is stuck, particularly if the tipover valve above is partially blocked then you can get fuel starvation
Large amounts of debris on the filters - drain tank remove petc'ock and clean. Remove filter between carbs by pulling off fuel pipe and lifting white filer out with long nose pliers.
Next up is a common failure point, the ignition pickup, often when this fails it runs fine until the bike is warm then the engine cuts, restarts after a few minutes, and keeps doing this. People often mistake it for fuel starvation.
The coils are prone to failure, especially (it seems) those made by Gill. substitution or Triumph test tools will diagnose a problem here.
Other wiring problems, pay particular attention to the large multi-block connectors, water and corrosion in these can cause poor running, cut-outs etc.
finally, the brain can go bad, Triumph Test tools (at the dealer) will diagnose it.[/list]this isn't an exhaustive list, but I just wanted to give a troubleshooting order for Hinckly carb bikes.
Photos of the breather valve and how it shoudl be oriented can be found in the shop scrapbook photo album.
