I am looking to change the header from the two pipe split
to the triple pipe exit out the right side. The dealer I talked to yesterday told me he thinks one of the older stock 600 headers will fit??? does anyone know a factory
part number or had experience with this???and is it a bolt on install or do i have some fab work to do???

I think you mean the older 885s, the 600s are all four pots.
I have seen a T-bird with a 3:1 pipe, unfortunately I never got to talk to the owner to find out what the manifold came from.

It's a long way from PA, but Sprint Manufacturing in the UK show a 3:1 pipe in their catalogue -

http://www.sprintmanufacturing.co.uk/ - look at the 'Race cans and silencer' bit.

Might be worth an e-mail/call to see if they have what you need.

Newbie question. What would you gain out of going from 3-2 to 3-1? Is it for aesthetics or is there a perfomance gain?

according to the local shop tech their is a few pony gains from this conversion(from what "they" learned at factory school)....or so i am told...wanted to check with you guys
