What exhaust do you have on the bike? If it's the stock can, then you are probably best off with the original map. Having experimented with a few different maps, I found the best performance with a Jardine can came using the Triumph aftermarket silencer map. Everything else makes it run a bit rich. There's no specific map for your sprocket combination, but you can adjust the readout using TuneEdit.

Go soothingly on the grease mud, as there lurks the skid demon.

It might, but historically, OEM Triumph air filters are very high quality and are about as good as aftermarket when they are clean. The TuneBoy website has a listing of maps for various supported bikes, including factory maps and a few maps from other sources. It's a great resource, but make sure you think it through before putting a different map in your bike. Some bikes benefit from an aftermarket map. My experience is 675s benefit less.

If you are concerned about the bike running lean, you can put the Triumph map for an aftermarket can into your ECU. I don't know the current map designation, since they change every so often. Be aware it will likely run rich and you may have some issues with your catalyst because of it.

Interesting.

My experiences show the opposite - a well tuned D675 shows very nice gains at WOT and part throttle, with better response and acceleration. This is especially true when you tune the cylinders individually. The further you modify from stock, the more the benefits grow.

If you are remapping for your individual bike, then yes, I would expect it to be beneficial. In general, though, my experience has been with relatively generic maps which are floating around the internet. They are less beneficial, for what should be obvious reasons. Triumph maps seem to be the best generic maps. If you have the time, money, and facilities to map each cylinder individually (TuneBoy can do it), then I would expect the results you mention.

It also depends on the application. If you are setting up a bike for pure track work, then it doesn't matter so much if it's a bit peaky. If you are trying to optimize for the street, the ultimate top end power is less important, and tractability and throttle response across the board are more important.
