Not sure how easy that would be on the Daytona. I have the ST, and the mounting rails can be attached and removed. At the rear they screw into the arm of the indicators. The mid-point is a lug on the subframe up under the seat fairing, and the front point is the inside face of the pillion peg. There is a bump stop on the side of the rear mudguard to stabilise the bag.
This is just the tip of the iceberg though. There are a number of strengthening plates that have to be added to the rear of the ST to give the mid-point mount, and to strengthen the subframe (particularly torsionally)
To fit the luggage, I have to rotate the endcan to move it down 4". I'm fairly sure that the Daytona high mount would foul the panniers.
You could probably fashion something akin to the frame that a guy here has made to take the givi luggage, but I would still be uneasy about the torsional thing. I notice for the Givi rack that the panniers sit really high to clear the can.

I went the other way. Uprated the front springs, and changed the fork oil, then added the 05 Daytona engine!
