Is there a water temp senser? What tells the ecu that the bike is warm and to drop the idle?

Could the aftermarket pipe be causing the high idle?

Coolant temperature sensor feeds panel indicator and ECU. It is an input to the idle air control valve which sets idle rpm.

How is coolant temperature reading during the ride? Is the electrical fan switching on when you stops after riding?

Well, even in the 100plus temps we are having the temp gauge stays well below the half way mark...And the fan dose come on after I shut it down.....
Any way to test the coolant temp sensor?

Another question I have, is it normal for these bikes to kinda slam into first from neutral? clutch feels fine....But it goes into first really hard.

Congratulations, nice bike although not as fast as the Aston Green ones...

The thermostat can be checkedby removing it and measurig the temperature that will made it to open (85°C). Coolant indication has to be checked with a scanner connected to the ECM.
