Dave ditch the 180 and fit a 190/55 and you will have a sharp steering bike.
For comparison I am a very heavyset stocky lump built like a brick at 5'10" and weighing 106kg without any of my custom made leathers or other gear.
I am running my 3rd set of Dunlop Qualifier 2's (although I just have a normal Qualifier on the front at present) and run at around 31-32 psi front and 32 - 34 psi rear on the road.
On the track I run 30 and 30 front and rear and for me with my weight these pressures work well.
I think your slow steering is coming from the suspension and I think a change to a 190/55 rear would also help.
