Hi & welcome,
I have no specific knowledge of the model you have but I can't see unleaded fuel being a problem.

Tyres are largely personal preference, provided you have popular sizes.
Depends also on how you ride & what mileage & grip level you expect. Personally I like the Bridgestone BT 020 which is a sports touring compound.

If you want parts new or second hand or maybe even a workshop manual www.sprintmanufacturing.co.uk are very good people to deal with.

I second Nige's opinion of BT020s. They will go on my TT600 when I buy new tires to replace the BT010s that it came with. A big heavy bike like the Daytona 1000 might also benefit from a rounder profile like Metzler MeZ3 tires. You wouldn't get as quick a turn in, but they are extremely stable at all angles. I used them and MeZ4s (harder compound) on a Bandit for many years and was very happy with them.

Very Nice!

I remember trying out a 1200 Daytona that hurt my back, at a time when I wasn't conditioned to that type of seating position.

Nonetheless, very nice - you might consider sending a picture of it, others would be interested in seeing it!

Any vehicle registered in the UK after Jan 90 (halfway through "G" prefix) had to be able to run on unleaded.
This was the engine that was stroked to produce the 1200. Quite a rarity now, I can only recall seeing 2 of them.
Very nice and fast.
