How do like that phat rear tire/rim? Any noticable difference in handling?

Looks like you just spent some good money. I'm thinking of getting the big tire kit but I want to get all that I can out of the current rear tire first, it has about 4500 (s)miles on it.

How does it ride/handle with the bigger tire?

Well, the rear outperforms the front end so much now I must get the front "in order".
But the confidence in the twisties is something else....the quality of the b-c kit is incredible. The rim required very little ballast and the finish is outstanding.
I installed it myself in less than 30 minutes. The fender and tire in less than an hour.
