My 1954 T100 seems to have non standard sleeve in it. The book says the original bore is 63 mm but mine is now 60mm. If I bore the sleeve to 63mm and fit a standard piston will the 1mm of wall thickness be enough or must I look for an undersize piston?

Change the sleeve, if possible. Contact Los Angeles Sleeve company for a replacement.
You might want to ask them if you can send your cylinder and pistons to them so that you can get a functional cylinder back.
