Haven't seen a California title, but I presume it's like most and has a place on the back for transfer. New York is a fairly picky state when it comes to titles, so you'll want to be careful in filling out the details; that is, having everything completed that is your part, and not filling in anything else.
I would bet your local bank could advise you on the specifics, as they will have loan officers and clerical people who handle vehicle titles all the time. They might also advise you as to the best way to handle payment, so as to minimize or eliminate waiting time for checks to clear.
Just as general advice in the meantime: as transferor or seller, you should be sure to print where it says to print and sign where it says to sign, not vice-versa, and use the form of your name that is shown on the title. You should have the buyer's name and address filled in where it asks for the buyer or transferee (never give someone a signed title without that filled in!), the odometer certification completed (also a must!), the selling price filled in if there's a place for it, and your signature notarized if California has a place for that by the seller's signature.
(Some states do, some don't, and it matters quite a bit. Kansas titles don't have a place for notarization, but if the originating state does, then the title being transferred MUST be notarized before anything can happen. I just got done waiting two months to tag an English sports car I bought from a guy in Ohio because his broker didn't think that was important. The seller apparently had quite a nice little vacation with the proceeds of the sale. I had to send the incomplete title back to him to get that done, but he was gone and unavailable to get it notarized until just last week. Finally got all the paperwork to our courthouse today, but I'm less than thrilled with both the broker and the seller at the moment. I've never had it on the road yet, and sports car season is over half gone for this year!)
And finally, you should probably contact the buyer to see if New York requires a bill of sale along with the title, and/or if he will need a photocopy of your current registration too.
