Hi Gaj,

are you setting the idle with the engine hot or cold? I found my bike to be most stable if I set the idle to around 1500rpm when the engine's hot, i.e after riding for a few minutes, rather than with the bike sitting warming up on the drive. If I set the idle with the bike cold, it tends to run as you describe when it warms up. In my experience, the stickiness of the idle adjuster doesn't help! Incidently, does any one else know if there's a way to lube the idle adjuster without stripping the carbs?

Other issue could be an air leak - are there any cracks in any of the rubber manifolds around the carbs or airbox? This could lead to funny fueling and performance.
