Since I assume you're biking all the way -- rather than trailering out -- let me suggest heading up the heart of Florida into Georgia. Bypass Atlanta and go on up into NoGa, then on into NC & TN. Head west on US412 (look it up on your TN map) and follow it through TN & AR. Enjoy NoAR, one of the great places to ride that's just barely west of the MS. Go on up into MO and enjoy more of the Ozarks. Still got time left? Then head west through southern KS. Most people don't even know how great southern KS can be. Great sweepers/hardly any traffic (but watch your gas gauge -- hardly any service stations on the route, either. You'll need to go off the main road into town to find services & motels). Still got time? Then head south through eastern OK into NE TX. Go on down into TX Hill Country. You're probably out of time by now, so head it back east through LA, MS, AL, GA, then turn south back towards Orlando.
