It seems pretty obvious to me that the "professional carb rebuild" left something to be desired. Monoblocs helped propel hundreds of thousands of motorcycles perfectly well for years.
If I do say so myself, I'm pretty good at making these old atomizers work, so why not take them off, pull them down, and note the size of the jets and cutaways, the diameter of the carb bore, and take some photos. Post the info or email me directly.
NOW.....if it gets dodgy when warm, also suspect tightening valve clearance, shaky coil or condenser. Do you still have the old 4CA points with the condenser on the plate, or have you gone late model or EI?
Locate the problem first, then spend money.
