You did not state what size your jets are in your carbs. If you are hesitating on acceleration and surging when you back off on the throttle, you are too lean. You have reduced inlet and exhaust restrictions allowing more air into the engine. The Main jets will have to be upsized. You will probably have to insert a number of shims under you 2 needles.

Check out this link. Open up the "Jetting Calculator" and fill in your engine specs. It will give you a good starting point for jet sizes. You can also open "Pat's Carb Site" for a how to guide. http://www.dinqua.com/

My guess would be 135 mains, 1 or 2 shims under the stock needles and 42 pilots. Once you start, be prepared to play around.
